Improvising with what’s in my fridge: purple cabbage, chopped mint and cilantro tossed in wasabi, ginger and toasted sesame oil with cinnamon sprinkled papaya, brightened with lime juice.
Wanted to add coconut but it was no good. Also made a red quinoa to mix in but left out for this salad version.
There is much to experiment with this combo- I imagine a version with roasted papaya (if that’s possible??) and fresh coconut, maybe even a coconut milk. Mmmm
